Spring Pea & Mint Gazpacho


What a perfect time to throw a luncheon outdoors. My darling friend Glenda Kravetz who is the HOSTESS WITH THE MOSTEST gave a lovely baby shower for our good friend Kathy and her expecting daughter Ashley.

With the help of The Kitchen catering the party, the rest of the perfect touches were then added by our hostess. One of the most delicious and FAB chilled soups was served and I wanted to share the recipe with you.

Spring Pea & Mint Gazpacho
  1. Melt butter in a large heavy pot over medium heat. Add onion and cook, stirring often, until softened but not browned. 6-8 minutes.
  2. Add 2 cups broth and bring to a boil. Add peas, reduce heat, and simmer gently until tender, about 5 minutes for fresh peas, about 2 for frozen.
  3. Remove pot from heat. Add parsley, mint, and remaining 2 cups of broth to the pot. Puree soup in a blender or with an immersion blender, thinning with water if soup is too thick, until smooth. Season soup with salt and pepper.
  4. Whisk crème fraîche and cream in a small bowl to blend. Top with chives and crème fraîche mixture.

Note: chill to perfection and then if you want to make this TRULY FABULOUS top with creme fraiche and edible flowers!!!!!!
